He became in 1660 one of the original settlers of Norwich, where he was adeacon of the church and a representative of his town in the GeneralCourt at Hartford. In 1691 he deeded to his son, Joseph, his rights in"our thousand acre interest, or one allotment, in the new plantation,above Norwich, that was willed by Joshua, Sachem, son of Uncas."

From WFT#5677 Vol. 3: Simon, like his brother Christopher, spent hisyouth, probably, with his mother in Windsor. He seems to have possessedthe spirit, and to have shared the fortunes of his brother. He appearsat Saybrook where he married Sarah and in 1660 joins the colonists whosettled in Norwich. There he stands among the first of that importantsettlement, both in church and state. Here his house lot was in acentral and commanding position, and the records show him to have been alarge landowner, and in worldly matters, an enterprising man. He wassoon chosen deacon of Mr. Fitch's church until succeeding to his son in1696, due to his health. In 1674, with Thomas Leffingwell, representedNorwich in the General court and again in 1685. In 1686 the town grantedhe and sons thirty acres of pasture, westward of Goodman Sluman. In 1690and 1696 he was townsman, in 1694 was on the committee to search andreport on the deficiencies in the records. In 1697 he was on a committeeto seat the meetinghouse. 1700 appointed to a commission to deed anewlands about whose titles disputes had arisen or were likely to. In 1703,he and son Simon deeded away thirty acres of pasture land, west of thegreat plains, to John Gifford. The following record is copied from theWindham, CT probate records.
To all Christian people to whom these presents may come: Know ye thatI, Simon Huntington, sen., of Norwich, in the county of New London, inthe colony of Connecticut in New England, have of my own free will,given, granted, unto my son Joseph Huntington, of the same town, county,and colony aforesaid, and do by these presents, give, grant, alienate andpass over my whole right, title, interest in and unto our thousand acreinterest, or one allotment, in the new plantation above Norwich, that waswilled by Joshua, Sachem, son of Uncas. I, the aforesaid SimonHuntington, have freely and absolutely given, alienated and passed overunto the aforesaid Joseph Huntington, my whole allotment, situated andbeing in the southeast quarter of the aforesaid plantation above Norwich.
